Foxtail Bakeshop in Bend, Oregon opens retail location adding to busy family & growing business.
Best known for her pastry and wedding cake works of art, Nickol Hayden-Cady is not one to shy away from all of the work and joy that a growing business and family can bring. Soon you will be able to enjoy her creations at a new store front, Foxtail Bakeshop.
On the heels of the birth of her son in 2012, Nickol was working as the executive pastry chef at Portland’s Papa Haydn’s. She and her husband decided they missed her Central Oregon family and everything the community here offered. They moved their small family back to Bend and launched Foxtail Bakeshop specializing in wedding cakes using seasonal and sustainable ingredients. Success followed with word of mouth driving business, several awards and positive reviews in local and regional publications didn’t hurt either.
Demand, beyond capacity, for wedding cakes and specialty bake goods has paved a path to a store in the growing Galviston neighborhood. Foxtail Bakeshop at 735 NW Columbia, next to food cart cooperative, The Lot, will be their new home.
Customers will be delighted by the creme brûlée, macaroons, tarts, panna cotta, and specialty cookies such as Smoked Sea Salt Chocolate Chunk. “Of course I will continue to bake wedding cakes but the new space will allow me to add some pastries and deserts you can’t find elsewhere. I am looking forward to bringing inspired baked goods featuring the best quality ingredients from local purveyors and organic produce whenever possible to my community here in Bend,” says Nickol.
Nickol, her husband, family and friends are all pitching in to renovate the new space after a successful Kickstarter crowd funding campaign. The grand opening is scheduled for October 17 and Foxtail will be serving up their unique goods Wednesday through Saturday 10am-7pm.
“I am honored to have such amazing friends and family who believe in me. Now it is time to make Bend, Oregon even sweeter,” said Nickol.
