Bend’s Westside has a new food truck serving up New Mexican cuisine this summer. Sol Verde, located at 345 South Century Drive next to Repeat Performance, is bringing a taste of New Mexico to the high desert with authentic dishes made with signature red and green chile peppers.
The food truck will be open Tuesday through Friday from 11am-4pm with outdoor seating through October.
Kat Morrow is Sol Verde’s proprietor and chef. Morrow, who was born in Texas and was a resident of New Mexico for 22 years, was inspired to open Sol Verde by her love of cooking, her desire to feed people and her enjoyment of delicious enchiladas.
“We invite local residents and visitors to Central Oregon to spice up their weekday lunchtime, enjoy the weather or swing by to pick up an early dinner to go,” encouraged Morrow. “We have samples, lunch specials, vegetarian and wheat-free options and we will happily accommodate custom orders. I get great joy watching the smiles on faces young and old when they experience the hearty, complex flavors and I’m excited to join this growing Bend niche.”
