The U.S. catering industry — whose beginnings are traced to a 1778 event in Philadelphia for William Howe, Commander-in-Chief of British land forces during the American War of Independence — grew to an estimated market size of $72 billion by 2023 — and is expected to reach $498 billion by 2032. In fact, catering accounts for 11 percent of the total food service industry revenue.
Two factors are credited: the resurgence of corporate events (According to the 2022 International Caterers Association (ICA) industry survey, 48 percent of caterers reported corporate events, such as full-service and staffed events, as their largest area of growth.) and weddings (the largest source of revenue for catering companies in 2022).
Current Industry Trends in Catering for 2025:
Quality and Sustainability:
While plant-based trends continue to grow, animal-based menus remain a staple in the catering industry, evolving with modern consumer demands for quality, sustainability, and culinary innovation. In 2025, expect a renewed focus on premium, ethically sourced meats, seafood, and dairy products that deliver both taste and a commitment to responsible sourcing.
Locally-Sourced Ingredients:
Clients increasingly favor caterers who source ingredients locally, supporting regional farmers and reducing environmental impact. This approach also enables seasonal menus that highlight fresh, high-quality ingredients.
Interactive Food Stations:
Gone are the days of static platters and chafing dishes. Clients are increasingly requesting interactive food stations to enhance the guest experience. From DIY s’mores bars to customizable poke bowls, these create an immersive, memorable culinary moment.
Non-Alcoholic Beverages:
The non-alcoholic beverage market is booming, and 2025 will see the drinks industry evolve even further. With “sober curious” movements taking hold, more events are looking for inventive alcohol-free cocktail alternatives that don’t make guests feel like they’re missing out.
Global Fusion Flavors:
The world feels smaller than it did five years ago, and that means consumers are more open to global flavors. 2025 will see an explosion in global fusion menus that offer guests culinary experiences that feel fresh and unique.
Health and Wellness Focus:
Demand for nutrient-rich and functional foods is on the rise. Caterers are incorporating superfoods, vegan options, and allergen-friendly dishes to cater to a broader audience.
