The Executive Chef David Cohen of Rat Hole Brewing has unveiled a new restaurant within the Rat Hole Brewery: Cohen’s Stacked Bistro — stacked with freshness and flavor and featuring breakfast, small to large plates and desserts with 10-15 specials everyday of “fast, casual food that is natural and local with a full bar”….to be served with or without your favorite brew.
Opening in July, the odds are stacked for success in his flavors too. The menu includes gluten-free, vegetarian and a menu for the kiddoes as well.
Cohen has been a resident of the area for 20 years and has brewed up many tasty businesses and dishes from his East Coast roots with a Pacific Northwest twist. Previous to being the executive chef at Rat Hole Brewing in the Sunriver Business Park, Cohen was the head chef at Cafe Sintra and Marcello’s in Sunriver. Last year Cohen sold the Central Oregon restaurant he co-owned for eight years, Rockin’ Dave’s Bagel in Bend.
Cohen was born and raised in Goshen, New York and earned his degree in culinary arts from Paul Smith’s College and was originally hired as a sous chef at a high-end restaurant at Hotel Saranac in the Adirondack Mountains of upstate New York and then worked at Villa Vespa in Lake Placid, a classic Italian restaurant where everything was made from scratch.
He then began his trek to the Pacific Northwest where he initially worked at the Adobe restaurant on the coast in Yachats, Oregon.
“I really likes working for myself and combining the freshness and flavors of his past culinary adventures,” explains Cohen.
