The Central Oregon Community College Foundation is hosting Farm to Table, a benefit for sustainable culinary education at the Jungers Culinary Center, on Saturday, August 11 at the Jungers Culinary Center at 2555 NW Campus Village Way in Bend. The appetizer reception starts at 4pm followed by dinner at 5pm.
The Farm to Table dinner event is the culmination of a two-week intensive culinary course, during which students work on a local farm to gain a first-hand understanding of small-scale farming and food production.
“Through this experience, students gain insight into not only where and how food is grown, but also the science, economics, utilization and overall importance of practicing sustainability in their careers in the hospitality industry,” says Chef Thor Erickson. “In addition, our future chefs will get to know their local sources personally and build relationships will local farmers and ranchers.”
The event will also include optional educational demonstrations and tours:
Noon – Piggyback Ranch Tour of Heritage Pig Farm – just minutes away from Cascade Culinary Institute at 63727 Johnson Road, Bend (transportation not provided)
Noon – Pickling Summer Vegetables Demonstration by CCI Students – CCI Demonstration Theatre
1pm – Baked bakery and Rainshadow Organics farm will discuss how local flour is grown, produced and made into bread. CCI Demonstration Theatre
2pm – Red Tail Farms Heritage pig-butchering demonstration by Chef Thor Erickson. CCI Demonstration Theatre
3pm – Savory Spice Shop will demonstrate how to spice up local produce. CCI Demonstration Theatre
