The dinner for 60-80 guests will include five passed hors d’oeuvres, a six course tasting menu, and wines paired with each course. The early spring menu will feature the wonderful ingredients and products unique to Oregon. The menu must be practiced until perfected by the Chefs.

Oregon wines will be carefully paired by Glenn Asti, owner and beverage manager. Susan Asti, owner has created a signature cocktail for the event using central Oregon spirits.

Every ingredient must be shipped from Central Oregon to provide guests with the experience of eating at Ariana in Bend. All costs associated with this event are paid by the restaurant and the services donated to the James Beard Foundation in order to further the educational initiatives, food industry awards, scholarships to culinary schools, publications, and the maintenance of the historic James Beard House in New York City’s Greenwich Village as a performance space for visiting chefs.

Ariana will be holding two dinners in March featuring the menu that will be presented in New York to help offset the costs. Information about the dinners and updates about the event will be available on our website, by email, facebook, and twitter as they are available.

The James Beard Foundation www.jamesbeard.org is a New York-based national professional non-profit organization named in honor of James Beard that serves to promote the culinary arts by honoring chefs, wine professionals, journalists, and cookbook authors at annual award ceremonies and providing scholarships and educational opportunities to cooking hopefuls.

The Foundation was started in 1986 by Peter Kump, a former student of James Beard and founder of the Institute of Culinary Education. At Julia Child’s suggestion, Kump purchased Beard’s New York brownstone at 167 West 12th Street in Greenwich Village and preserved it as a gathering place where the general public and press can appreciate the talents of established and emerging chefs. The James Beard House hosts frequent dinners featuring selected chefs working the Beard kitchen in the company of Foundation members and industry professionals. Notable past chefs have included Daniel Boulud, Emeril Lagasse, Nobu Matsuhisa, Jacques Pépin, and Charlie Trotter.
